We are always on the hunt for tasty restaurant meals and home recipes that shine the spotlight on healthful ingredients, like fruits, vegetables, and whole grains, in fun new ways. ABC’s The Chew recently featured several plant-based recipes in an episode devoted to Meatless Monday. We’re particularly eager to try Michael Symon’s Portobello Blue Cheese Sandwich. To amp up the nutritional punch of this sandwich, add extra leafy green arugula. If you’re watching fat and calories for a healthy heart and/or a healthy weight, try reducing the amount of blue cheese and oil used in the recipe.
