Makes 2 Servings
Salad Ingredients:
- 2 cups Brussels sprouts, shredded or very thinly sliced
- 1 cup carrots, shredded
- 1 cup fennel,thinly sliced
- ½ cup bacon (6 slices), cooked and chopped
- 4 cups green and red seedless California grapes, halved
- ½ cup green onions, sliced
Dressing Ingredients:
- 3 Tbsp. balsamic vinegar
- 2 Tbsp. extra virgin olive oil
- 1 tsp. minced garlic
- 1/2 tsp. table salt
- 1/4 tsp. pepper
Directions:
Toss all salad ingredients together in a large bowl. Whisk together all dressing ingredients in a medium-sized bowl and drizzle over salad. Toss until ingredients are well coated with dressing.
