Casa Sol y Mar, the newest dining destination in the Bazaar del Mundo Restaurant Group, opened in May 2013. This is the fourth restaurant in a family of fine Mexican eateries scattered throughout San Diego County, and it is located in the beautiful Del Mar Highlands Town Center. The Healthy Dining team was welcomed in by the sights and smells of authentic Mexican food – we knew we had selected the perfect place for our Healthy Dining Fiesta.
The evening started with live entertainment from traditional Mexican folk dancers while the Healthy Dining team used our mobile site to decide which delicious, dietitian-recommended meals we would be devouring! With Healthy Dining menu items such as ceviche, fish tacos, arroz con pollo, enchiladas and fajitas, it was not a decision we took lightly. If you’ve ever wondered what dietitians order when out for Mexican food, here is a peek into how we celebrated Cinco de Mayo at Casa Sol y Mar.
Rachel Rothman ordered the turkey picadillo soft tacos, which were served with black beans and topped with red onion and pico de gallo. Amanda Hibshman ordered the grilled fish tacos on soft handmade corn tortillas, topped with cabbage and Casa Sol y Mar’s special jalapeño white sauce. Nicole Ring and Anjali Patel ordered the Ensalada Ignacio, a salad of romaine lettuce, tomatoes, avocado, onions, grilled chicken breast and cotija cheese. Anjali substituted black beans for the grilled chicken to make this meal vegetarian friendly. Mary Parsons ordered the turkey picadillo enchiladas verdes, served with black beans and jicama slaw.
I shared the combo fajitas with a friend who joined us for the Healthy Dining fiesta. The smell of caramelized onions and marinated meat wafted through the air as they brought out our fajitas on a cast iron skillet. We loved creating our own tacos using the fajita meat and vegetables, black beans, fresh guacamole and house made corn tortillas.
The evening was capped off with skinny margaritas and light cervezas – everything in moderation! Casa Sol y Mar provided a perfect setting for our Cinco de Mayo fiesta, our team will be back soon for more delicious, authentic Mexican food!
