If you’re looking for a killer recipe for curry that is relatively simple and nutritious, try this Chicken Curry Recipe. For a couple of reasons, this delicious recipe from Serious Eats is a good one to have on hand:
- It demands relatively few (minimally processed/whole food) ingredients, most of which are regular household staples, including garlic, chicken breast, turmeric, tomatoes, thyme and parsley.
- The herbs and spices included are rich in antioxidants and add a delightful and complex flavor profile to the dish.
I suggest pairing this curry with your favorite whole grain (brown rice, quinoa, barley, etc.). To make this a vegetarian recipe, substitute tofu or garbanzo beans for the chicken.
