This refreshing salad from BJ’s has cubes of cool watermelon, arugula, mixed greens, pickled red onions, feta cheese and mint with honey vinaigrette. Add your own touch with a sprinkle of nuts or seeds or grilled chicken (not included in nutrition information).
Makes 2 Servings
Ingredients:
- 2 Cups Mixed Baby Greens
- 1 ½ Cups Arugula
- ¾ Cup Fresh Watermelon Cubes
- 2 Tbsp Pickled Red Onion (Recipe to Follow)
- 2 Mint Leaves
- ¼ Cup Honey Vinaigrette (Recipe to Follow)
- 3 Tbsp Feta Cheese, Crumbled
- ¼ Tsp Fresh Parsley, Chopped
Pickled Red Onion:
- ½ Cup Red Onion, Sliced Thin
- 2 Tbsp Rice Wine Vinegar
- Pinch of Taragon
- Pinch of Kosher Salt
- Pinch of Ground Black Pepper
- 1 Tbsp Granulated Sugar
Honey Vinaigrette:
- ¼ Cup Italian Dressing
- 1 Tbsp Honey
- 1 Tbsp Fresh Orange Juice
- 1 Tbsp Fresh Lemon Juice
- Pinch of Kosher Salt
- Pinch of Ground Black Pepper
Directions:
- To make honey vinaigrette, whisk ingredients together in mixing bowl and refrigerate until ready to use.
- To make the pickled red onion, whisk together vinegar, tarragon, salt, pepper, and sugar until combined. Add sliced onions and allow to “pickle” for 2 hours in the refrigerator.
- Assemble salad by tossing together baby greens, arugula, watermelon cubes, pickled red onions, and mint with honey vinaigrette. Mound on a plate and top with feta cheese crumbles and fresh parsley.
